Methylglyoxal (MG) is formed by the fragmentation of glycolytic intermediates, by lipid peroxidation systems, in the catabolism of amino acids and in the oxidation of acetone. As a highly reactive α-oxoaldehyde, it strongly interacts with proteins and nucleic acids, inducing mutations and apoptotic cell death, or producing advanced glycation end products (AGE) involved in the pathophysiology of diabetic complications and the progression of various age-related disorders including Alzheimer’s disease, cardiovascular disease, cancer. The aim of the study is to quantify methylglyoxal present in different brands of honey available in India, using LC-MS Method.
